I guess subtext? Or irony. Or denial. Actions that counter what is being said.

This is a great speech by the master of dialogue himself... Aaron Sorkin. I don't think he goes by the same philosophy as Mr. Towne. He's more on the other end of the spectrum. Lots of ways to do great dialogue.
