The Cambridge Companion to Fantasy Literature: Edward James and Farah Mendlesohn

 
The Cambridge Companion (James & Mendlesohn, 2012) that Serra mentions above is a good jumping off point. And Rhetorics of Fantasy (Mendlesohn, 2013) is also worth taking a look at. I don't know if that's recent enough for you though, Peyton.
